Just bought this frakkin toaster from the states
I'll no doubt need a 240v-110 drop down adaptor but they come in a variety of wattages - would 500W be enough or do I need something more?

Well, it should certainly brown your toast in record time - given that you'll be connecting a 110 V appliance to the UK's 240 V mains!
